The Italians are famous for a fennel-pork dish called "Umbrian Pork,"
(after Umbria, in Italy).  I am wild about the stuff and it's really easy. 
In a coffee grinder, coarsely grind 1TBS black peppercorns and 1 TBS fennel
seeds.  Mix with 1TBS Kosher salt.  Rub your pork (I like tenderloins) with
olive oil, then sprinkle all over with the spice mixture.  Cook (I grill
mine) and eat.  It's spicy and wonderful.  I use the exact same recipe on
whole chickens.
